Just my 2cents:
Server: too common, everyone dealing with desktop for some years can learn this very quickly so less competitive.
DB: High income career path. A dba can earn $600-1000/day depending on exp, if you have some programming exp you can go db development if not you can go db management/maintanience direction.
Networking: CCIE and equivalent exp can secure a good pay but since there are so many networking gurus nowadays it's not a very easy way.
MSCE/VMware: Specialised in virtualization plus some backup-restore knowledge can get a very competitive pay too.
Personally if you don't wanna spend so much time I would say MSCE/Vmware has good ratio on return/time, it's costless now to buy a good desktop with enough memories and build up your own lab. Vmware has free ver too to practise data protection like vmotions.
During the setup you will encounter many prob but after you succesfully configure your lab you might already become an entry-level sys admin, so you have many to talk and gain basic troubleshooting skills to coupe with the interview questions. Get a job to accumulate the exp in an enterprise level company and try to duplicate the issues in the work at your own lab, find best solutions, keep on this track and you will eventually become virtualisation guru.
