材料:
10个鸡翅(切半)
2汤匙椰丝干
10汤匙椰浆
3汤匙清水
酱料:
1个洋葱
5瓣蒜
3根红辣椒(去籽)
4茶匙黄姜粉
3支香茅(取根部, 切片)
调味料:
2汤匙咖喱粉
2汤匙罗望子酱(Tamarind paste)
1汤匙油
1汤匙糖
1-2茶匙盐
锡纸
做法:
将鸡翅洗净, 备用。
将所有酱料的材料搅拌成糊状,加入椰丝干,椰浆,水和调味料混合均匀, 抹在鸡翅面上,腌制6小时或隔夜。
取锡箔纸将鸡翅包好, 放入预热烤箱里以180度烘烤45分钟即可。

2 tablespoons dessicated coconut
10 tablespoons coconut milk
3 tablespoons water
Spice paste:
1 red onion
5 cloves garlic
3 red chilies (seeded)
4 teaspoons turmeric powder
3 stalks lemongrass (white parts only, sliced)
Seasoning:
2 tablespoons curry powder,
2 tablespoons assam paste
1 tablespoon oil
1 tablespoon sugar
1-2 teaspoon salt
Aluminium foil
Methods:
Wash chicken wings and pat dry.
Blend all spice paste ingredients in a blender to form a paste. Mix the spice paste with dessicated coconut, coconut milk, water and seasoning and rub all over the chicken wings and marinate for 6 hours or overnight.
Wrap the chicken wings with aluminium foil and bake in preheated oven at 180°C for 45 minutes. |
