'RAW' just traditional raw iron, with no pre-seasoning or surface blasting. Coated in natural beeswax for rust protection, ready for your seasoning and cooking. However, our new to Kickstarter Raw AUS-ION Lightning pans, will not be wax coated - they will be just dipped in oil to prevent short-term rust and ready for seasoning.
'SATIN' shot-peened and lightly pre-seasoned all over, with no additional anti-corrosion coating to remove prior to use. Ready for your seasoning and safe to cook with 'out of the bag. This is not another synthetic coating. This is natural non-GMO rice bran oil transformed into natural non-toxic seasoning on our Satin surface finish. This finish is achieved through a process called 'shot peening' (also known as shot blasting). Thousands of small steel balls are fired at the surface at extreme velocities to indent (peen) the surface without removing metal. The end result is a luxe satin finish.
The difference is the finish of the product at the manufacturing level. RAW means the pan is left RAW post-manufacturing (similar to french carbon steel pans) and has a fine layer of natural beeswax applied to protect it from rust and SATIN is shot-peened and pre-seasoned with a layer of rice bran oil post-manufacturing.
Thus SATIN is textured (much like cast iron) though with seasoning the performance of the pans ultimately is the same. SATIN was developed to create efficiency in seasoning especially for cooks new to iron. RAW is smoother sooner, whereas SATIN takes a little more time though too will be smooth.
With seasoning and cooking, both finishes perform the same, the finish makes no difference to the durability of the pan.
