Ingredients:
800g chicken thigh fillets
Marinate ingredients for the chicken:
1 tablespoon fish sauce
1/2 tablespoon brown sugar
Freshly ground black pepper
Sauce ingredients:
1/2 cup brown sugar
50 ml fish sauce
50 ml rice vinegar
50 ml water
2 cloves of garlic (minced)
1 tablespoon minced ginger
1 shallot (minced)
1 jalapeño (sliced)
1 large red chilli
1 stalk Spring onion (cut into sections)
roasted sesame
1 dessertspoon cooking oil
Methods:
Marinade the chicken for about 1 hr.
Combine all the Sauce ingredients in a bowl and mix well. Set aside for later used.
Heat oil in a frying pan on medium heat, add the chicken fillets (skin side up). Allow to sear without touching the chicken fillets for 1-2 minutes and then pour in about 1/4 of the sauce. Do no move the chicken fillets as you want the chicken to sear and caramelize. The sauce will start to thicken and the chicken fillets will brown after about 4-5 minutes. Check to see if it's nicely caramelized, then turn the pieces of chicken over and pour in the rest of the sauce.
Lower the heat and continue to cook until chicken fillets are cooked (make sure to turn the chicken fillets a couple of times during cooking) and sauce is reduced to nice thick consistency, Add jalapeño, chilli and Spring onions and continue to cook for about 1 minute. Dish up and garnish with roasted sesame.
