swimmer crab kinda sea crab, from sea water, mud crab mainly from mainland fresh water or da mixsure of salty water&fresh water, darwin crab is da best in mud crab as wellknown, some one called mud crab as meat crab, swimmer crab could be da smaller size of sea crab, da bigger one would be snow carb or king crab, swimmer crab usually got 3 different colours: blue, yellow, red~~~in common, blue swimmer got it greatest number~~~cantonese and japanese call it "花蟹", 国语叫梭子蟹~~ maily catch form sand in da beach, so SDY man called it as "黄沙蟹" in selling da lived one~~da lived one taste alright, da frozen one just shit~~~in cooking, blue swimmer beta to be cooked and served wit congee bcoz it contain 2 much water inside da body, or steam it, locked its water, otherwise da taste all gone, so basically its not good 4 fry, unless ya kitchen got strong gas stove which can locked its water.....one of 宁波&无锡 cooking way is 干烧梭子蟹, similar to steaming way, 福建&潮汕人would make da big red swimmer as "冻蟹" or salty crab~~~ thai ppl would like blue swimmer to be fried with green curry &fish source& some herbs or mints(金不换or 九层塔), yummy one, Janpanese and korean ppl would cook it in congee or shabu shabu, i would have it in chinese hot pot with free range chicken, free range chiken and blue swimmer defintely are good match in hot pot~~~ |
