Ingredients:
1+3/4 cups of self-raising flour (cup----> I used the normally mug at home for tea)
1/4 cup plain flour
1 teaspoon cinamon
2/3 cup brown sugar
1/2 cup milk
2 mashed banana (note---> you need to buy bananas and wait till they are really ripe (when the skin are black basically so bananas are sweet with strong banana taste)
2 eggs lightly whisked (note---> dont beat the eggs too hard)
50g butter melted, cooled (note---> I melted the butter in microwave, then wait till its cool; if you add hot melted butter to egg, it will cook egg and make it become solid)
Process:
Step 1: Melt butter (do it first, so it can cool down)
Step 2: Preheat oven to 180oc
Step 3: Sift flours (both self-raising and plain) & cinamon & Sugar in a big bowl (note---> I use my big glass salad bowl)
Step 4: mash ripe bananas in a separate bowl (close to mashed potato,you know what that looks like)
Step 5: crack eggs to another bowl and lightly beat them, add milk to lightly whisked eggs
Step 6: then add the mashed bananas and cool melted butter to the egg/milk mixture,just stir
Step 7: add the liquid to the big bowl and mix with flours/cinamon and sugar (note---> dont mix too hard, when it's evenly wet, its fine. Mixing too hard will affect the texture
Step 8: Pour the mixture to the long baking tray (as per the photo) (note---> it should be half full or 2/3 of the tray as the cake will "Grow")
Step 9: Take a wire rack out of oven (note---> for later use)
Step 10: put the tray into oven and cook for 35mins
Step 11: when the banana bread looks brown, take out quickly and wrap with foil and put back in for another 15mins (note---> the banana bread will fail if its burnt outside and undercooked inside. To wrap the bread with foil, it won't burn and will keep cooking the inside).
Step 12: Banana bread is done (looks like mine:-)
Step 13: put the Banana Bread onto the wire rack to cool....
