让大家久等,悉尼这几天的破天气弄的一个接一个的生病,到现在才有空发方子。
方子是按flourless orange cake 改版的
15 kumquats
5 large eggs
350 g raw sugar
250 g ground almonds
1 teaspoon baking powder
2 teaspoons orange liquor (optional)
Method
Place kumquats in saucepan and boil for two hours, or use the pressure cooker. topping up water as necessary.
Allow to cool then cut into pieces, place in blender and blend until smooth (pips and peel can be included).
Preheat oven to 200°C and line a 20 cm round cake tin or muffin tin
Beat eggs and sugar together.
Mix in baking powder, stir in the pureed oranges and gently fold in almond meal.
Mix in orange liquor if using, then pour mixture into tin.
Bake for 55 minutes or until knife inserted in centre comes out clean. Allow cake to cool in pan before removing. ( if you use muffin tin the baking time can be reduced)
Dust with icing sugar prior to serving.
