Barramundi sashimi with sesame dressing and citrus salad recipe
Ingredients:
2 fillets barramundi, very finely sliced
Dressing
¼ cup Ayam soy sauce
1 Tbs Ayam fish sauce
1 Tbs Ayam sesame oil
1 orange, juiced
1 cm piece ginger, peeled, finely grated
1 kaffir lime leaf, finely shredded
½ red chilli, deseeded, finely chopped
2 Tbs sesame seeds, toasted
1 orange, segmented
Mint leaves, to serve
Coriander leaves, to serve
Method:
1 Place the fish slices across a serving plate.
2 For the dressing, combine the soy sauce, fish sauce, sesame oil in a bowl. Add the orange juice, ginger, lime leaf, chilli and sesame seeds, season with salt.
3 Top the fish with orange segments and herb leaves, pour over the dressing to serve. |
