WHITE linen, oversized lamps, comfy chairs. David's is a premium yum cha experience, with a premium price tag, and it's worth every cent. Delectable, fleshy pork ribs are sticky and sweet with a rich plum sauce. Yielding pork siu mai has a succulent and gingery interior, juicy har gau come in perfectly pleated, green (spinach) wrappers, and green beans are fried with shrimp and Sichuan pepper. Excellent service caps it off.

GDP's food is a cut above. Dumplings are flavour-packed parcels, the balance of flavour and texture just right, like soft pork siu mai and Shanghai dumplings with a hot burst of salty broth. Roast pork comes with crisp skin and the dessert trolley is loaded with favourites such as mango pancakes. The room is spacious with ornate wooden tables and chairs, and the service upbeat and friendly.

A HIGHLY atmospheric eating house loaded with oriental bric-a-brac, birdcages and bed-like booths. Service may need prompting but the food is spot-on: soft, doughy pork buns; velvety lobster and scallop dumplings; and good har gau. Sensational is the dipping sauce with chopped dried chillies, Sichuan peppercorns, peanuts and chilli oil.

SWISH and sophisticated, East Imperial has a loyal following, with its bright service, low lighting and sexy fit-out. Signature potato prawns are wrapped in shredded potato and fried, and the char siu bao are primo – lean, house-roasted pork is honey sweet, encased in a puffy, light dough. Come early and settle in with a nice bottle of wine.

Chaddie is home to a smart, new, Oriental Tea House, and the restaurant has a real buzz. The space is slick and colourful, organised and calm. Signature roast duck dumplings in sheer-pink wrappers deserve a second steamer, and char siu bao is doughy and supple. There are chicken feet, but it might raise a few eyebrows if you order it here. Also Prahran and the city.

CHAOS, trolley grid-lock, lazy susans and big, boisterous groups — on weekends around 1000punters pour through the door for lunch cooked by 10 dedicated yum cha chefs, all from Hong Kong. The selection is vast with sweet chicken pies with crispy pastry, cold beef with jellyfish, sweet durian puffs and pastry-wrapped, coconut ice-cream balls.

FANCY Federation Square dining with a civilised, low-key vibe and an emphasis on steamed food. Top-value banquets ($25.50; with dessert $33) bring hits such as textured pork siu mai, handmade har gau, spinach dumplings and misses, such as the sausage-roll-esque pork buns. Service is faultless however.

TOURISTS and passers-by file in for yum cha at this L-shaped room with enormous windows framing the view of the Yarra and Jeff's Shed. Service is prompt, by a young, uniformed staff, the vibe on the civilised side and the offerings decent. Try crisp spring rolls and ginger and prawn dumplings with loads of ginger.

GOLD Leaf is the king of kitsch with rotating chandeliers, ornate gold dragons, and muzak piped loudly through the speakers. Yum cha here is fast, fun and animated — rapid-fire trolleys bring vivid-green Chinese broccoli, classic dumplings (sometimes a little dry) and buttery custard tarts. A yum cha mainstay. Also in Docklands, Springvale, Sunshine and Burwood East.

FREDDIE Mercury would feel right at home here in this glam-rock haven strung with chandeliers (one in the shape of a dragon boat), and decked out in daggy maroon and brown. It's loud, brash and congested with trolleys bearing stock-standard offerings — lots of fried goods and so-so dumplings. But who cares, right? It's packed every weekend.

DECADES-old Shark Fin Inn has a frantic food-court kind of atmosphere with trolley jams, brusque waiters and cheek-by-jowl seating (don't be surprised if dishes are passed under your nose to a neighbouring table). Not much has changed at this institution so expect lots of (pretty average) fried food and dumplings. But the vibe? Excellent. Also Shark Fin House (131Little Bourke Street, city) and Keysborough. |
