你看营养成分表,那三种油Trans fats都是0。
但是橄榄油比较适合凉拌,因为Smoke Point低,猛火爆炒不行的。
实际上如果花生好,冷榨花生油也是适合高温煎炸炒的健康油。但是为了防止发霉的花生中的霉菌和过敏原,花生油都是高度精炼的,所以难免反式脂肪酸多了一些,也不会有任何花生的味道。炒菜用油少差别不大,天天吃,日积月累,心脏病的风险就高了不少。

Canola oil相比其它油,能减少心脏病和糖尿病的风险。

被FDA允许标识可以减少心脏病风险的油只有Canola Oil, Olive Oil和Corn Oil。
