i use thermometer.
every time when the temp is approaching to 60 degress, i see the volume getting expended in a much faster rate accompanied with a different type of noise from the jug. if i turn the steam wand off at this moment, the temp will keep going up and stop at about 70 degrees.
i know this cos i use the thermometer every time and find its a patten, its repeatable and predictable
i know there is another rule - to feel the temp with your fingers.
introduce the air when the milk feel cold or slight warmer than your body temp (steaming stage). turn off the team wand when you cant hold the jug with your bear palm within three seconds (end of the texturing stage). personally i dun like to hold a hot/burning thing in my hands. i know and can use this practice to get the milk done perfectly too, but i mostly only use the thermometer to get a consistent and accurate result |
