The name is a cryptic clue: Blancharu is where France meets Japan, showcasing chef Haru's take on blending two of the world's great cuisines. The ever-personable chef works hard to overcome any qualms about his fusionist leanings, and will often come to the table himself bearing his creations, including a 'harbour bridge' of puff pastry over foie gras terrine with a spiced port reduction. Forget sushi trains, this is more Shinkansen bullet train; sleek, efficient and bustling. Along for the ride is all of Potts Point, leaning in to see and hear each other in the dark over a handful of tables, or lining the lantern-lit bar for close-up views of chef Nobu Ito and his sushi knifework. He can do straight, all right-his sashimi is skilful and his sushi classic, with a particular type of shoyu (soy) sauce for each. He has a subversive creative streak as well-a tranche of Tasmanian salmon comes with the tang of passionfruit, and miso-marinated cod baked in a curl of balsawood is set alight and sent, smoking, to the table.
