Ingredients:
375g chicken wings
2 potatoes (cut into chunks)
1 carrot (cut into chunks)
2 cloves garlic (chopped)
1 stalk Spring onion (cut into sections)
Cooking oil
Marinate ingredients for the chicken wings:
2 teaspoon light soy
1/2 teaspoon dark soy
1/4 teaspoon chicken powder
Pepper to taste
Sauce:
1 teaspoon light soy
1 teaspoon dark soy
1 teaspoon oyster sauce
Sesame oil to taste
3/4 cup water
Cornflour
Methods:
Blanch the chicken wings in boiling water for 2-3 mins. Rinse and drain well. Mix well with the Marinate ingredients and set aside for 1 hour.
Combine all the Sauce ingredients in a bowl, mix well and set aside.
Heat oil in a frying pan over medium high heat, sauté the chopped garlic until aromatic, add in the marinated chicken wings, potatoes and carrot. Stir fry for a while.
Pour in the Sauce mixture, cover and simmer for 30 mins till chicken wings are cooked and potatoes and carrot turned soft and gravy thickened.
