Common names: Tahitian Spinach, Celery Stem Taro, Bạc Hà, Dọc Mùng.
This taro was developed for its yield of edible leaves and stems rather than its roots. The leaves and leaf stems are eaten as a cooked, green vegetable; the stems are widely used as a celery substitute in tropical areas. They provide protein, calcium, phosphorus, iron, potassium and vitamins A, B, and C.
In Vietnam, the stems are cooked for sweet and sour soup (canh chua), salad (gỏi), hot pot (lẩu).
The plant like moist or wet soil and is happy to be grown in shade or part shade. It is prone to producing heaps of small bulbils that, if disturbed, can spread rapidly. It tends to be hard to clear out of an area because of the sheer numbers of these small bulbils. So it is best planted off in a corner, where it can be left undisturbed. The plant can grow up to 1.5m.
